Mexican Zucchini Soup



I love soups. Can't live without soup. And soup is quite healthy, after all we are made most of water, isn't it?

Ingredients:

 1 small onion, finely chopped
1 & 1/2 teaspoons vegan margarine
2 cups vegetable bouillon
2 cups zucchini, diced in small pieces
1 & 1/2 cups corn kernels
3 tablespoons jalapeno peppers, finely chopped
1/8 teaspoon black pepper
1 cup soy yogurt
2 tablespoons nutritional yeast or soy Parmesan minced fresh parsley and ground nutmeg as optional garnish

Chicken With Sesame Noodles



Ingredients:

1 lb spaghettini (get the thinnest spaghetti you can find)
1/2 cup soy sauce
1/4 cup sesame oil (some reviewers have said that 1/2 cup of oil is too much and have halved the amount, so use your own)
1/3 cup sugar
3 scallions, thinly sliced
1/4 cup sesame seed (or more)

Funky Chicken

1/4 cup soy sauce
1/4 cup teriyaki sauce
2 garlic cloves, minced
1/4 cup brown sugar
1 teaspoon fresh ginger, chopped (or 1/4 teaspoon dried)
4 boneless skinless chicken breasts
sesame oil, for sauteing

Simple, but tasty. Yammie-yammie! I will definitively try this!


Ingredients:

3 tablespoons extra virgin olive oil
1/2 sweet onion, diced
2 garlic cloves, minced
1 (4 ounce) can diced green chiles, drained
2 1/2 cups prepared salsa
2 tablespoons adobo sauce (optional)
1 1/2 cup low sodium chicken broth
14-15 ounces yellow corn tortilla chips
3-5 eggs
salt and pepper to taste
garnishes:
1/2 cup queso fresco, crumbled
1-2 radishes, thinly sliced
1/2 bunch cilantro leaves, roughly chopped
hot sauce
